Bianca has called in the help of a nutritionist here to help her on her weightloss duty.
She can and can't eat several things.
We have to be a little bit more flexible with what we eat from now on.
Tonight we decided on grilled chicken from the green egg with a load of vegetables.
I eat mine with a wrap. Bianca had some beans instead.
Let's grill!
Ingredients: Wraps, red peppers, chives, parsley, chicken breasts, aubergine, yogurt (not in pic) zucchini and mushrooms.
I cut the chicken into strips and coated them with this rub. I then skewered them on a wooden stick and added some mushrooms in between.
I lit the green egg that still had some coals left in it for one grill session.
While the green egg was getting hot I cut the vegetables into slices. The peppers I left whole. I gave them a nice coating of olive oil and rock salt.
Time to grill. I added the chicken and the Peppers first. You can see Bianca's separate pieces on the grill on the left. It took about 8-10 minutes to cook. I then took the peppers and chicken off and then added the rest of the vegetables.
I took everything inside. It looked nice!
Bianca made this fresh sauce with yogurt, garlic, chives, and parsley.
I took the chicken off the stick and cut the vegetables into strips.
End result in 3 pics! A very tasty and healthy meal. I did add a bunch of hot sauce to my plate to give it a nice kick.
