99 times out of 100 I would make steak on the green egg.
I like the process better. It's more relaxing.
Also taste wise nothing can beat BBQ in my opinion!
But tonight they forecasted a lot of rain and it was just me. (Bianca is in The Hague).
I decided to go for a pan fry.
It's a completely different taste compared to bbq but you can do do some fun stuff like basting the steak in butter.
Let's cook!
When it's just me I usually don't bother peeling potatoes to much. These potatoes had those things on them that grow when you leave em to long. I cut those off but left the rest. I like the peel (although it's a sin in mash I guess!).
This is the steak. It's ribeye and it looks wrinkled. That's because I defrosted it in water. I had no time to do it properly. It doesn't effect the taste as far as I know. After you dry it and let it sit for a while it returns to normal.
I put the pan on medium heat and added a little oil. This steak was pretty thick so I didn't want to blast it from the start. It will get too crispy and not cook in the centre.
I added the potatoes to boil. I use a pressure cooker. Takes about 8 minutes.
After about 5 minutes I added some butter to the pan. (double from what you see here).
You can use the butter to baste the steak from time to time. You can't so this in a green egg that easily!
When the internal temp reached 47-50c I took the steak out of the pan. I let it rest for 5 minutes so the juices could settle (If you cut it straight away they will just pour out onto the board.)
I mashed the potatoes with some milk, butter and salt. Nothing special really! I added the steak next to it.
End result! Pretty good result as far as I'm concerned! I was a happy man tonight . Steak and mash just works! But it never did rain!
