Palm wine which is known as Africa best natural drink, it is an alcoholic beverage gotten from the sap of various species of palm tree which belongs to the family of palmae such as coconut palm, date palms, etc.

Here in Nigeria it is called oguro, in Ghana it is called asafufuo and Kalli in South India. It is consumed mostly by men, and it is mainly use and play a vital role in traditional marriage ceremony.

Palm wine is said to be a building block of life due to it contents of amino acids. It also contains potassium and magnesium, it helps in the building of body tissues due to it content of potassium, and it conduct electricity in the body, hence it is an electrolyte to the body.

It is very good for pregnancy in that it supports normal growth and development due to its contents of zinc, and it convert carbohydrates to glucose.

Fermentation process

When palm wine is tapped fresh it is considered a fruit juice or drink as it contains no alcohol which makes it highly nutritious to the body(not yet fermented), it fermentation begins immediately after collection is done and expose to air and within two hours it turns into alcohol due to yeast present in air, and with an alcoholic percentage of 4%, at this stage it has a sweet taste and white in color, after 24hours it alcoholic percent increases.

METHOD OF EXTRACTION

Palm wine are extracted from Palm tree by palm wine tapper (an individual who occupation is tapping of palm wine), palm wine can be extracted by climbing the palm tree using a climbing tools e.g rope, cut off the leaves with a knife, slash the flowers unit you get to the point were the sap begins to flow out, drill a hole, fix a bamboo into the hole so that it can flow through it, and attach a rubber or calabash so it can flow into it.

Also it can be extracted by fallen the palm trees and follow same method by drilling an hole into it and attach a rubber. This method is more safer but bring produces smaller quantity and it is destructive in the sense that the tress die after 3 - 4weeks.

precaution

One has to be very careful in consuming Palm wine regularly due to the fact that after fermentation, it alcoholic contents increases even more than that of the well recognized beverage, and it can lead to kidney problem.
