Plum Rakia is the most known one, and most produced sort. Still, if 2 neighbors are making it from same sort of plum, and with same equipment, it will be 2 different drinks.
There are many masters of this job, and they can do better with crap fruit and old n broken equipment, than you could do with 1st class material&equipment.
Thats the all wisdom behind it / experience. Same thing is with drinking rakia. Theres people who knows how to drink and enjoy it, and there is people who let it transform them into pigs and blackout.
Grape Rakia is totally different drink. Grape and Plum rakia differences are like... Cognac and Vodka.
Pear Rakia can be really piece of art. Best one i ever tried was made of Karamut black pears. That was best booze i tried in my life so far^
There is Rakia made of every fruit one can imagine. From kiwis to mulberries and back to coconuts. And its not just fruit. There is pepper rakia, cabbage rakia, and believe it or not, there is even Rakia made of wooden planks. Dont ask me how. I decided i dont wanna know.
They all share the name - rakia, but its all completely different drinks. They have different taste, strenght, color and smell.
Also, if you have Plum orchard, and your own equipment and technique, there is still no way to produce same rakia for 2 yrs in a row. Its taste, strenght and smell heavily depends on how was the summer for your fruits.
Many people, including myself, are storing their booze classified by the years because of that.
This year, most of the fruits almost died during the drought and heatwaves.
When that happens, it means there wont be enough of quality fruits for rakia, so we usually make rakia of all fruits we have at once. Pears, Plums, Grapes, Peaches, Cherry, Quince, Apples, spiced up with some rosehip, fist of coffee beans and few pots of medlar. Sometimes that weird mixture makes the best results.
There is 1000 of recipes, but its quite individual thing / everyone makes it different way.
Every house is a factory, and everyone believes his Rakia is the best one around. Quick tip> Never, ever take side in whose rakia is better fight^
