After a busy day where I liked to press the reset button, I still had a late trump card to make the day work.
Babytop steak on the Green Egg
I had what they call baby's meat to go on the green egg. Normally I bbq on feeling and the eye.
But this time I decided to use a temperature gauge to get the core temperature of the meat exactly right. The last part of the day had to go well!
And it went well! I left the meat in aluminum foil for 10 minutes after baking. This improved the taste. What a tender piece of meat!
With a matching wine and a lovely outdoor temperature, I was still enjoying after eating.
On to tomorrow!
