While viewing cylinder seals, her symbol is a sort of curly uterus. It commonly is described as the Greek Omega, a much later invention.
In Mesopotamian iconography, the mother goddess is represented by the Ω sign, which is thought to represent a uterus. Sometimes the Ω sign is accompanied by a knife, which is interpreted as the tool that is used to cut the umbilical cord after birth. From: oracc.museum.upenn.edu
