Hake (fish)
All hake species can be found in the south American cone: Argentina, Chile and Peru. In Chile, they pass through the seas of Valparaíso to the Strait of Magellan. In the Atlantic sector they are closely related to the Malvinas Current. Southern hake (Merluccius australis) also has a population in New Zealand, while Patagonian toothfish (Dissostichus eleginoides) can be found in the Indian Ocean.
All varieties are exploited as a fishing resource of the countries where they are found, both for domestic consumption and for export to the rest of the world.
Of all its varieties, European hake is the most valued for its tasty meat. A nutritional level is considered very healthy as it is rich in proteins of great biological value, as well as vitamins, especially group B, and minerals, such as potassium, phosphorus or magnesium.
Its mild flavor tends to please both adults and children, making it a good alternative for children to consume fish. In addition, it is easy to clean the dish because of the visible and localized spines.
