The best way to convert Crypto into FIAT to avoid taxes?

I am really interested in knowing how do you convert your cryptos into FIAT if you ever need to.

What is the best or easiest way to do it to avoid taxes (if possible)?

Do you use localbitcoins?
Do you buy gold?
Do you just do it normally and hope noone comes after you for taxes?
