Lazy Saturday morning, our are bellies full and our bodies are nourished!
This past week I was able to score a case of organic red bell peppers for $10! Pictured missing about 4 peppers. So we have been eating lots of peppers!
Today I threw together a Paleo hash in my favorite cast iron skillet, utilizing a couple of those yummy peppers.
All organic, sauted in coconut oil:
π2 Peeled & chopped sweet potatoes
π3 chopped carrots
π1 chopped onion
π2 large red bell peppers
π1 zucchini, chopped thickly
π3-4 large handfuls of power greens (kale, spinach, chard), chopped
π6-8 organic, pastured, uncured, paleo chicken sausages, chopped
π³8 organic pasture/free range chicken/duck eggs from ... Cooked separately then added in.
πPink salt & pepper to taste.
1/4 avocado for each person.
