Marlborough Sounds is one of nature's treasures. Many parts of it are only accessible by water. Ferries go through there from Wellington, often followed by dolphins and sometimes even a whale will show its fluke.
There is also a mail boat that visits remote locations with mail and supplies. Definitely a must visit if you get to New Zealand.
