I made a quick meal for work today. I love quick meals made at home because they are freshly made. I also make small portions because I don’t want to eat the same thing all week.
This is diced potato made in a spicy soup or potatoe soup. I used flour as a thickening agent.
To start I diced up potatoes, onions and red bell pepper and a little ghost pepper (optional ). I took about 5 spoons of flour and browned it a bit.
Then in the main cooking pot, I put in oil, then when it got a little hot I added onions and potatoes and salt. I also added curry powder, Maggie cubes, sage, garlic and ginger. In fact you can add whatever spices you want in your soup.
Soon after I added diced up bell pepper and a little ghost pepper. I also added a nice amount of mixed vegetables and let it cook for a bit. Later I added water and the flour.
You need to constantly stir at first to ensure that the flour doesn’t burn at the bottom of the pot. Let the mixture sit for about 15 minutes until the potatoes are done.
It’s quick, easy and nutritious.
