Ohhh great... i think if i have to pick a favourite right now it would be water kefir... however my teacher at the Fermentationist Certification Programme (which i am yet to learn a lot from !! ) believes that probiotic foods are best taken in small amounts with each meal and very varied..i.e. many different ferments throughout the day and in small amounts - obviously this gets you most variety in bacteria... will be posting loads more as i continue learning.
