Last weekend, I had the opportunity to go on a free tour of a sake brewery in Niigata, Japan. The brewery was old, and hadn’t appeared to have been updated in many years. In fact, if people hadn’t been working in the building, and if there hadn’t been clean utensils and glistening equipment placed here and there, it would have been very easy to have mistaken this building for one long vacated and left behind.
Outside the weather was overcast and moody. Between intermittent flurries and sudden periods of heavy snow, the sun would momentarily come out and create really interesting lighting effects inside the somewhat gloomy and oddly colored interior of the brewery.
