4 pork loin chops (or pork fillet cut into thick medallions) 2 Tbsp smooth apricot jam (chunky works too, just mash it with a fork) 2 red chillies, chopped (remove seeds for a milder flavor) 2 cloves garlic, crushed Juice of 1 lemon Olive oil Salt and milled pepper
Method
Prep the Meat: Trim any excess fat off the pork chops.
Make the Sauce: In a small bowl, mix the apricot jam, chopped chillies, crushed garlic, and lemon juice together.
Sear: Heat a little olive oil in a non-stick pan over medium-high heat. Sear the chops on both sides until browned.
Glaze: Pour the jam mixture into the pan over the chops.
Cook: Reduce heat to medium and cook for about five minutes. The sauce should become "gungy" (thick and sticky) and the chops should be cooked through and slightly crispy around the edges.
Serve: Season with salt and pepper. The recipe recommends serving with quick-cook brown rice and a fresh salad or vegetables.
