Day six of my trip visiting Brazilian coffee plantations, we arrived at a new region Sao Lourenco to visit Carmo Coffees who are broker traders for a number of local coffee plantations including including two plantations owned by Luiz the director of Carmo Coffee.
We started out visiting the coffee processing facility, where they have drying tables covered by blue tint roofing. They also have fermentation tanks here where they can vary the fermentation and also develop new flavours by adding a thick coffee yeast liquid called Musto to the tank.
After that we visited the plantation fields to see the different coffee varieties they are growing. They have an experimental lot of Geisha which they are hoping to see good results from. And they have a large amount of Yellow Bourbon which is popular in these areas. Due to the topography of the land they have to hand pick in most areas, but with the unusual weather conditions this year they have been able to have the pickers pass the same crops multiple times only ever picking the ripe red cherries.
The trees have so many cherries in different stages of development- from the very green just starting to ripen to the past ripe drying on the tree. With selective picking they can only get the perfect cherries- so there is no sorting process needed they can go straight to be dried or fermented.
Walking to though the fields we met many of the pickers who were of all ages - although no children the laws are strict only when over 16 years old can they start to work. They were happy workers though talking, laughing and singing even.
After visiting the plantations we returned to the main office to a cupping session of coffees from twenty local farms - that is a lot of coffee to cup. Fortunately with cupping you don’t actually drink the coffee - you suck it off a spoon into your mouth trying to coat your palette and then you can detect the delicate flavours of the coffee before spitting the coffee out into a container. The coffee of course was excellent, I did find four that were my own favourites although we all had different favourites.
