Good sources of protein, healthy fats, fiber, vitamins, and minerals are essential for our health. However, some people may not appreciate or understand the value of these foods because they are more accustomed to fried, spicy, or canned foods. Among my few relatives and my friends, many believe that my meals are too good for their understanding, they prefer street food, fried spicy unhealthy options, and junk food instead. While that’s their choice, I can’t change my eating habits because others don’t share my preferences.
I recently made cookies rich in healthy fats, fiber, and vitamins, and sugar free. I prepared them for a festival where we typically use sesame seeds and jaggery. However, this time I decided on some new healthy less sugary treats. When my friends visited and tried the cookies, most of them didn't like them because of less sweetness. They didn’t understand the value of this kind of food. As we say in Marathi, “A donkey doesn’t know how to eat jaggery; it prefers to go for trash.”
back to my seed recipe.
Ingredients:
1/2 cup grated dry coconut
1/2 cup sesame seeds
1/4 cup sunflower seeds
1/4 cup melon seeds
2 tbsp pumpkin seeds
14 cashew halves
22 almonds
2 tsp coconut oil
1 tbsp jaggery
2 tbsp cocoa
1 tsp coconut oil

Melon seeds.
Pumpkin seeds
Sunflower seeds.
Roast sesame seeds and grind them until they release oil.
Roast cashews and almonds and grind them until oil is released.
Roast pumpkin seeds and grind them using a mixer.
Roast melon seeds and grind them to a fine paste.
Roast coconut and grind them until oil is released.
Here all powders/ paste of all seeds and nuts. 1 saved a few melon seeds and pumpkin seeds for garnish. You can do what you will like on garnishing.
use a food processor for final mixing, I used this handy one if you have a different one, you can use that.
put all powders/pastes in the food processor and run it for 2 minutes.
After 2 minutes the mixture looks like this.
Now add coconut oil and run the machine for 2 minutes more.
The paste becomes almost creamy.
Fill the muffin molds or any other or use your hands to make round balls and flatten them.
You can use it like this or add an extra layer of chocolate.
Ingredients for making chocolate sauce
Make a syrup mixing jaggery and water.
Add cocoa powder and stir it well.
Add coconut oil and the chocolate sauce is ready.
pour some chocolate sauce on the top of the cookies.
decorate with saved melon and pumpkin seeds.
Keep in the refrigerator for 15 minutes or more until they set.
Remove from fridge and remove from mold as well.
Enjoy the sugar-free gluten-free, full of protein, and healthy cookies.
