Hello, community, friends, and vegan lovers! Greetings! I would like to share a memorable experience from my friend's birthday on March 30th. We celebrated with a small and joyful gathering for her birthday. I surprised her by making an unusual no-bake cake. As someone with Norwegian roots and a lot of cake-making experience, she has made many varieties of cakes in the past. However, this cake truly made her day, and she was very happy and glad about it.
I am sharing this recipe with you on Meatless Monday.
Ingredients:
400 grams of strawberries
pinch of salt
5 cm fresh ginger
5-6 sprigs of mint
1/2 cup date paste
2 tbsp coconut oil
1/4 cup coconut milk
2 tbsp decicated coconut
1 tbsp tahini
1 cup oatmeal
1/2 cup almond
1/2 cup cashews
In a blender, mix decicated coconut and almonds and make apowder.
Then add oatmeal and blend again to incorporate oatmeal into the almond coconut powder.
Take half a cup of date paste and add to the mixture of almond, coconut, and oatmeal.
Add tahini.
Coconut oil blend until get a nice dough-like consistency.
Prepare a caketray with parchment /baking paper.
Place the mixture in the tray and press it evenly, make a cakebase. Keep for 1 hour in the fridge for set.
In a mixer jar, put strawberries, cashew powder, ginger,1 tbsp sugar
Pour 1/2 cup of thick coconut milk.
Blend it into a smooth paste.
Pour it into the cake base that is prepared using coconut, almonds, oatmeal, date paste, and coconut oil.
Refrigate until set it
When it set cut according to your choice.
And it is ready to celebrate.
