Greetings to you all. Whenever we embark on a task, we hope for a positive outcome, but sometimes we face disappointment. This reminds us that no one is perfect. Cooking is no different – we may succeed many times, but at times, anxiety can creep in as the final dish is revealed.
Today, I'm sharing the story of my broccoli soup. I always believe that food should not only taste good but also look appealing. I planned to make broccoli soup with the expectation that it would turn out a lovely green color. However, to my disappointment, it didn’t meet my expectations. I learned an important lesson: when cooking green vegetables, avoid using red onion together.
Ingredients:
1 broccoli around 400 grams
1 big red onion
5 cloves of garlic
15 cashews
2 tsp oil
1 tsp salt
1 tsp black pepper
1 tsp thyme
1 tsp oregano
1 vegetable stock cube
2 avocado
Washed broccoli and put in warm water
Separated broccoli bone and broccoli florets
Warmed the oil in a pan
Added thyme and oregano.
Added onion and stir for 2 minutes.
Added garlic
and the broccoli stalks.
Stirred it well
Added water and cooked it until the broccoli stalk becomes soft.
blended the cashews with water in the mixer.
after it became cashew cream I kept it aside.

And the broccoli The green broccoli but it turned out a dull gray color Ohh.🙃
when it was cooked, I blended it using an immersion mixer
And the color is totally disappointing.
I added a few saved broccoli greens
and the cashew cream, but there is no way to make it an appetizing green. but the taste is good.
finally, this is a disappointing result.
Then I thought avocado would help but I never cooked avocado and don't know how it tastes after cooked. I cut avocado.
Roasted some chickpeas with chili.
Garnished with avocado slices, pour 1 tbsp cashew cream left over in the cup put some chickpeas on the top, and done. this way I managed to serve the soup. After that, I felt good to see my soup bowl. The taste was super but I had a challenge making the soup look appealing.
