Greetings everyone,
Today I'm going to make a sweet dessert made from an overripe banana locally known as Minatamis na saging.
Whenever I return to the city after spending my rest day at home I usually brought something just like vegetables freshly picked from my garden or it can also be fruits.
The other week I brought a couple of bananas from my father's harvest and sweet potatoes I bought from a neighbor. I already cook half part of that which I stew and ate it for a snack after two days I brought them here but as days goes by I was feeling so tired to move during my working days, therefore, I haven't noticed that the rest of my bananas are already been overripe in the corner and since I had my two days off which I decided not to go home because the budget was so tight. This week I got the chance to check and decided to transform the bananas into something delicious so they will not be wasted.
Ingredients:
- saba banana.
- sweet potato
- brown sugar
- sago (tapioca)
- salt
- water.
locally we call this type of recipe minatamis or simply in English it's sweetened. This recipe is just quick and easy to make since we only have to cook the ingredients accordingly but at this time in my recipe, we need extra time since we are using a sago and I'm adding a piece of sweet potato.
Cooking procedure:
- I started preparing the tapioca. I washed it thoroughly and then boiled it until it was fully cooked.
- Then while waiting until it is cooked I gradually prepare the main ingredients which are the banana and the sweet potato. I skinned them and slices them into thin pieces.
- After cooking the tapioca now it is time to add the main ingredients. First, since a sweet potato is a little bit harder than a banana I added it first then after about 5 minutes I followed the banana. Then I added a pinch of salt then followed by brown sugar good enough to sweeten our recipe since both main ingredients are already sweet.
- Lastly, continue stirring while on medium heat until fully cooked and thickened. After 3-5 minutes I achieved consistency and it was all ready to eat.
I just set aside to cool down a bit and ta-dah! Here is my banana and sweet potato minatamis dessert is ready for a snack.
