Today I made our local delicacy called abacha and ugba which is cassava flacks and oil bean and this two combination is a very nice one and healthy so I made it for family lunch.
Cassava flasks is gotten from cassava and we preserve them by drying them.
Here in Nigeria most of our families have cassava flasks at home for emergency.
Anytime you are in lack of food you can use cassava flacks for lunch, dinner or breakfast because is not a heavy food.
INGREDIENTS USED
1/4 paint of cassava flacks
A handful of oil bean
4 piece of fresh pepper
Salt to taste
1/4 cup of red oil
3 tablespoon of NGO
4 stems of garden egg leaf
1 medium Onion
Water.
PROCEDURE
This process is easy and simple and I will explain step by step.
STEP 1
I will first put my cassava flacks in a bowl boil water add add to my cassava flacks to help my cassava flacks to soft .
After some minutes I will drain the water and pour them in a clean pot.
STEP 2
I will now wash and slice my garden egg leaf, my onions and my pepper and set aside.
STEP 3
In a clean plate I will now pour my red oil and add my NGO and stir very well.
NGO is water gotten from burnt dry plantain peels and it makes my red oil very yellowish.
STEP 4
I will now add my oil bean together with my cassava flacks and start putting my ingredients.
STEP 5
Here i will now pour my red oil into my cassava flacks and add salt I will also add my pepper and my onions.
I will now stir them very well.
Here my cassava flacks and oil bean is ready.
Looking at this dish is very simple and tempting the taste is topnotch.
