For foriegners the fish head is unpalatable and some markets throw them away. But it is one of my favorite soup to make. It has a lot of flavors. My younger brother loves it too. Sometimes I am lucky we can get a good size head.
This was not so big but still delicious. Simple cooking with just onions, garlic, tomatoes and water. Then add water and salt. Just simple and boil, the natural flavors come out.
This was just half of the head. Just in time for the fasting of meat on Fridays during the Holy Week. I forgot the name of the fish.
