For the past week, it has either been raining or cold. Well, i get it, it's planting season, another season to give the soil what you what it to give back to you in a larger quantities.
This time around, i just want to watch my weight, eat healthier and exercise regularly, and one of the recipes I will be enjoying often is salad.
This time, I decided to make beetroot salad.
Beetroot is known for its great benefits. It helps build blood for people with anemia. It is one of the vegetables I don't play with ,especially when I was pregnant and it really helped me alot.
That's one of the reasons I decided to incorporate it into my salad.
This salad is a combination of some essential veggies, making it a delightful choice for anyone who wants to stay in shape while enjoying healthy dishes.
Here's how i made it.
Ingredients needed
- small sized cabbage (enough to fill 2 cups after slicing)
- 1 medium sized cucumber
- 4 big tomatoes
- 1 big beetroot
- salt to taste
- 3 cups of water for boiling.
How to make
This is an easy recipe and it took less than 10 minutes to prepare.
I started by washing all the veggies and then setting them aside.
Then i gave the cabbage a nice slice and set aside.
I also sliced my cucumber into tiny chewable piece and same goes to my tomatoes.

I grated my beetroot into long tiny flat shapes. This will allow me chew those tiny beetroot.
After slicing the veggies, i boiled the 3 cups of water, add some salt , and then add my sliced cabbage, stir for a minute and sieve out the excess water. I don't like my cabbage hard or crunch. I want it to be a litt bit soft, not too hard.

Now i mixed the entire veggies together. I poured the cabbage , tomatoes, cucumber and grated beetroot in a bowl and mixed them together.
Now my beetroot salad is ready! You can serve with any dish of your choice but i enjoyed mine just like that.
My baby girl loved it so much, and she ate to her satisfaction.
I love the texture of the cabbage, it's not too strong,but rather it's soft and nice. The tomatoes and cucumber complemented the cabbage is a very pleasing way and the beetroot made it enjoyable even without salad cream.
