My Niece Came To Visit
Going even further back, when my niece was in her early teens, she was our babysitter for our 2 kids, growing up. Suffice to say, she's been a big part of our life. However as does happen, she grew up. She got a cool big people job. And so, we saw less of her.
Below: Snip some fresh Basil for Pesto!
Pesto is simply some ground up basil, a little extra virgin olive oil, and some garlic, all mixed together. I use a small food processor to emulsify it, for a nicer texture.
Tonight's dinner, a Three Cheese Ravioli, with Pesto, was complimented with a Salad and fresh baked Biscuits. The salad below has lettuce and celery from my indoor grow lights. Soon, the Lettuce, Tomato, Carrot, Onion, and Celery will all be from the garden. Only the Feta Cheese will be store bought.

It was great having my niece over for dinner. Hearing her laugh, and the easy conversation was a nice touch, too. What about you? Who in your family do you miss seeing? When was the last time you saw them? Maybe it's time to reach out and say "HI!"
