A Good Day, Deserves a Good Dinner
Rosemary Pork Roast w/ Cinnamon, Brown Rice w/ Raisins and Brown Sugar
It was a pretty successful day, both prepping for my garden, working my seed shelf, and for helping my wife in her business, too. So, time for a treat, for the family.

Below: Along w/ the Rosemary in the Olive Oil, I also added the sprigs of Rosemary to the Roast

Below: Along w/ the Rosemary in the Olive Oil, I also added the sprigs of Rosemary to the Roast
I used some Brown Rice, and soaked a cup in water for 15 minutes. After, Boil 2 1/4 cups of water, then, add the brown rice, and simmer for 40 minutes. Once the rice was done, I added raisins, sprinkled some brown sugar, and mixed thoroughly. Let it rest until it time for dinner.
The roast was about 3 pounds, (1350 grams) so, into the oven at 375F (190ºC). The recipe calls for 2 hours, but I checked at 1 hour 30 minutes and the internal temp was 150ºF (65ºC). I pulled it out and let it rest.
Once it has rested for 10 minutes, time to slice. In the pan I added a tiny splash of balsamic vinegar, and de-glazed the pan. Drizzle that on top of the slices and serve!
This is an extremely easy recipe, and REALLY tasty. Its a nice little reward, since I try not to eat pork too many days in a month.
