This is my entry to the tasty #tuesday contest, initiated by friend .
Ingredients:
- 2 cups of oatmeal
- 1 cup of flour.
- 1/2 cup of sugar.
- 1/2 cup margarine
- 1 teaspoon of baking powder.
- 1 egg.
- 50 g of raisins.
- 1 teaspoon of vanilla.
- A pinch of cinnamon.
Preparation:
- Place the tempered butter in a medium bowl, add the sugar and beat with a mixer or paddle for three minutes.
- Add the vanilla essence, lemon zest and beat a little more. Add the egg and beat until incorporated.
- Then pour the raisins and oatmeal and beat at low speed to integrate them.
Place the flour with the baking powder and the pinch of cinnamon.
Finish mixing everything with a spatula until you have a homogeneous mass.
Let the dough rest for 10 minutes tightly covered.
Take portions and make peloticas, then crush them and place them on the tray, giving more or less rounded shape and leaving a couple of centimeters between the cookies.
- Preheat the oven to 180ºC,
Bake one tray at a time for about 20 minutes, until they have browned and begin to toast a little on the edges.
- To taste this fitness snack with a strawberry meringue. With this recipe I got 15 cookies.
It is important to know that we must include oatmeal in our daily diet because it keeps us sharp, because it has vitamins B1, B2, B5, B6 and E.
As for minerals, it contains potassium, iron, calcium, magnesium phosphorus and zinc. It also contains complex carbohydrates, and soluble and insoluble fiber.
