PEKING DUCK AND GRAPE SALAD

A great lunch that is light and packed with protein to get you through to dinner.
INGREDIENTS
1 packet of Peking duck breasts
1 bunch of watercress
1 fennel bulb – shaved
1 large bunch of red seedless grapes
1/3 cup of Pomegranate dressing
METHOD
Cook your duck to your liking in a non-stick frypan and slice thinly.
In a bowl, mix watercress, grapes, and fennel.
Place cooked duck in with salad.
Portion onto serving plates and drizzle with dressing.
Great with a glass of Rose.
