I'm not a vegetarian but I do like to try and cook at least one meat free meal a week.
Finding interesting meals without meat can be challenging which is why I'm sharing this delicious recipe. I found it on BBC good food but have tweaked it slightly for simplicity.
This dish was surprisingly super tasty, so easy and quick to make. It was a massive hit with the whole family.
You can follow the recipe or, to make it even simpler, you can make it with just the tomatoes, beans and pesto and leave out the rest of the spices. It still tastes great this way and even quicker and easier to put together.
