Ingredients:
- Lemon poppy seed dressing:
1/2 cup light mayonnaise
1 tablespoon grated lemon zest
3 tablespoons of fresh lemon juice
3 tablespoons of honey
2 1/2 teaspoons poppy seeds
1/4 teaspoon of salt, or to taste
- Salad:
1 lb boneless, skinless chicken breast, broiled, then chilled 10 minutes and diced
8 oz baby spinach
2 1/2 cups sliced strawberries
3/4 cup minced fish
walnuts, lightly toasted
1 large avocado, peeled and diced
4 oz feta cheese, crumbled
1/3 cup chopped red onion
Preparation:
1. For the lemon poppy seed dressing:
Whisk all ingredients together in a bowl until well mixed. Cover and store in the refrigerator until ready to use.
2. For the salad:
Layer spinach and chicken between 4 plates or in 1 large salad bowl then layer over remaining salad ingredients. Put on the salad and serve immediately.
