Tomato Curry Recipe
Hey guys, I'm going to make Japapnese tomato curry. When I buy tomatoes I usually buy them a lot, so after a while if I couldn't finish them in time it goes bad pretty quickly. At that time I make tomato curry :) I make a big pot of curry and eating it for few days. I eat curry with not only with rice but also Udon noodles, or ramen noodles. You don't have to worry about cooking for a few days if you have curry!! :D
I didn't add any beef or pork but it tastes still really good. I don't know if you guys knew about this or not, but curry and tomatoes goes really well together. Okay then let's get started!
Prep: 20minuets
Cook: 60minuets
Ingredients:
• Japanese curry cube 100g
• 1 large onion
• 3-4 large tomatos
• 5-6 large mushrooms
• 1 red bell pepper
• 1 Tbsp of cooking oil
• 1 Tbsp of butter
• 1 Tbsp of soy sauce
• 1 Tbsp of sugar
For garnish:
• asparagus
• shrimp
• flour
• breadcrumbs(panko)
• 1 large egg
course:
1. Slice onion, mushrooms thinly, and cut tomatoes and red bell pepper into cube shape.
2. Add 1Tbsp of cooking oil and 1Tbsp of butter to the pan, and stir-fry the onions. Add 1Tbsp of sugar and caramelize them. The process of caramelizing is long and rough... Stir continuously using spatula in a low heat. It will takes about 30 minutes.
3. I'm going to use Japanese curry cube. Add 1/4 cube first and mix with onion.
4. When the curry melts, add 750 ml of water and boil it. When the curry starts to boil, put the sliced tomatoes and pepper, mushrooms together. I'll cook it on low heat for about 20-30 minutes. My secret ingredient for curry is 1Tbsp of soy sauce. You should try add it too!
5. I'll make a garnish to eat with the curry. You can enjoy Japanese curry with a variety of garnish. You can go simple like just with grilled vegetables, but today we'll have asparagus and fried shrimps. Apply shrimp in order flour > egg water > breadcrumbs and fry them in a vegetable oil. Grill asparagus on medium heat.
6. Put the curry and rice in a bowl and set the garnish! Finished
