Summers are all about fun in the sun. One of my favorite things to do is spend a weekend at the beach with friends. This usually involves a lot of eating and drinking. Life is all about balance and I certainly enjoy a cocktail or two, so I'm always looking for ways to “healthy-up” my not so healthy habits. My husband was dead set on having Pina Coladas. I can’t even tell you the last time I had the coconut-pineapple concoction but it sounded like a solid idea. Of course, standard mixes are full of added sugars and ingredients I can not even begin to pronounce, so we decided to do this up the natural way. The recipe below is excellent. The drink is delicious. You’ll get to enjoy the beverage (and most importantly the buzz) with out the guilt!
All-Natural Pina Coladas: Yields about 4 drinks depending on size
*We were classy and served them in red & blue solo cups...no glass on the beach!
6 ounces white or spiced rum (We used white. For a good mocktail, you can substitute in coconut water)
1 organic banana, peeled
3 cups frozen, all natural (no sugar added) pineapple
1/2 cup unsweetened coconut milk
1 tablespoon organic, no sugar added coconut cream
Juice of 1 lime
***On a really hot day, some extra ice cubes are a savior. You can just pour the Pina Colada mix right over the ice.
Blend all of the above in a blender until smooth. Pour over ice. Garnish with lime, pineapple or cherries! Enjoy! ...In moderation.
