Ingredients
5–6 cloves garlic
1 knob ginger
1 large onion
5 tbsp curry powder
3 tbsp mustard seeds
3 tbsp jeera (cumin) seeds
1 large stick cinnamon
6 cloves
5 elaichi (cardamom pods)
4 star anise
1 can tomatoes
Curry leaves
Thyme (1 tsp)
1 cup water
Salt (to taste)
Instruction
Fry onion and garlic until golden.
Add ginger, curry powder, and spices. Stir well.
Add meat and brown it.
Add curry leaves and tomatoes.
Pour in 1 cup of water and season with salt.
Simmer:
Chicken: 40 minutes
Lamb/Beef: 1 hour 30 minutes
Serve hot with rice or bread.
