Nowadays, collagen is one of the most expensive proteins and with more claim in the market for all the benefits it provides. We can find it in pills, creams, hydrolyzed, in capsules, among other forms; but in itself, what is the collagen?. Collagen is found within the so-called structural proteins, which provide bones, tendons and ligaments with their characteristics. This protein is composed of three chains that form a triple helix and is characterized as one of the few proteins that contains the amino acid hydroxyproline. This triple helix is held together by the so-called "hydrogen bridge interactions" between the different peptide chains.
Functions
In addition to its important functions in the structural maintenance of many organs and tissues, collagen participates in the coordinated progression of embryonic and morphogenetic development, in the repair and regeneration of tissues, is responsible for the tensile strength of the skin, bones, vascular cartilage and tendons, among other functions. Therefore, all the above mentioned leads to this protein having a great importance in terms of its consumption and high demand in the market.
