I actually work with polyphenols in some of my projects. A little correction here:
"Tannins, Anthocyanins, Flavonoids" ARE polyphenols ;-)
Anthocyanins are a subgroup of flavonoids, and flavonoids are a subgroup of polyphenols ;-)
