Happy Memorial Day everyone, especially those that have served us!
As I write this post the rain is just about getting ready to end. But the damage is done….
They have cancelled the yearly parade in town, due to the amount of standing water everywhere from three straight days of rain. Plus it was still raining at the time the parade was supposed to start.
I am writing this post prior to leaving for a barbecue at my girlfriend’s house. I’m responsible for making the antipasta and dressing. So I’ll be doing that right after this.
I’m surprising them with a caprese salad as well. I bought a rather large ball of handmade fresh mozzarella yesterday from the Italian market and it seems like a waste not to use it all.
My antipasta is a traditional style like my uncle always did for any holiday. A base is of romaine cut up, with a little mescaline greens, vine ripe tomatoes, shaved red onion, green and black olives, roasted red peppers (which I did yesterday), salami, ham and fresh mozzarella. The dressing is both red and balsamic vinegar, fresh basil finely chopped, three cloves of garlic, half a shallot, salt and peeper and a teaspoon of raw honey.
