No that is incorrect! while many of us have expanded on the philosophy it has nothing to do with humans at all or non violence toward humans. Veganism is a philosophy based solely in animals rights and non violence where possible (meaning if you have to defend yourself from a lion trying to eat you it is allowed because the exact statement of the vegan society is where possible ). The mask mandate is not violence, not wearing one is- it is selfish and just the usual human me first attitude. It would not have to be enforced if humans were not so shit in the first place - also no one is forcing anyone to get the vaccine that would be immoral and yes a violation of rights - however if you chose not to get one you also have to accept that their might be places you are not welcome and be a grownup about it.
