The "Prior" bears in its name an unquestionable truth: Bortolomiol was in fact the first company to decline the Valdobbiadene Prosecco DOCG in the Brut version, when all the other wineries still vinified it exclusively as Extra Dry. Thanks to the spirit dedicated to the experimentation of Giuliano Bortolomiol, who with this Superior DOCG brings us to the qualitative tops of the company production. The glera grapes ferment at a controlled temperature in steel, then carry out the foaming and remain to refine for a variable period, between 1 and 3 months. A fine bottle without any smudging, where the aromas on the nose are fragrant and the taste is agile and refreshing: an opportunity to be seized to taste a truly exciting label.
TASTING NOTES
At sight it has a bright and intense straw yellow color; the perlage is thin and durable. The olfactory spectrum shows fruity notes of green apple, peach and plum, well mixed with floral scents of wisteria, lily of the valley and aromatic herbs. In the mouth it is striking for its great freshness and agility; it is dry and well balanced between a savory and acid component. Closes with a medium persistent finish.
PAIRINGS
It is the ideal wine for the aperitif, where its frankness lends itself to a large number of recipes and preparations. Excellent with seafood, it is to scream with lard croutons.
