Other than a Denver omelet and a taco, I don't know what food is especially "Colorado" (beer? pot brownies?), so I'm just going to post some photos of food and drink I have enjoyed here. This is a meal I had on my birthday a few years ago, looking out at frozen mountain lakes and sunshine:
Here's a really good beer I had the same little restaurant (which is in Red Feather Lakes, northern Colorado) a few weeks ago. It was a 90 Shilling Ale from Odell Brewing Co. Colorado has a lot of great breweries.

(full disclosure, that's an Alien Amber beer from Roswell, NM, but the THC caramel is from Colorado)
