Last week I went to a pick your own strawberries farm, it was a blessing the whole experience! It was fun, grounding, and smelled and tasted amazing! Connecting with nature is therapeutic and healing. We picked and picked and picked until the carton was overflowing and no more strawberries fit… so we ended up bringing 13 pounds of strawberries. Half of it are eaten already! :D
Indulgent Strawberries Recipe
Servings: 4
Prep time: 1 hour
Cooking Time: 15min
Dough:
- 18 Dates
- 1 cup Oats
- 1 cup Almonds
- Pinch Sea Salt
- Blend all the ingredients
- Place half of the raw dough into tartlet forms
- Put the tartlets in the freezer until they harden or for about 1 hour
- With the other half of the dough, make thin circles and tiny balls
- Bake at 180°C (350°F) for 15 minutes
Strawberry mousse:
- 1 Avacado
- 20 Strawberries.
Blend all and refrigerate.
Strawberry sauce:
- 20 strawberries
Blend and refrigerate.
Strawberry juice:
-20 strawberries
Cook the strawberries in a pan on low heat for 10min.
Chia pudding:
- 1/2 cup Cashew milk
- 1/4 cup Chia seeds
- 1 tsp of vanilla extract
To make cashew milk:
- Place 1 cup of soaked cashews to 3 cups of pure water in a blender with 1 tsp of vanilla
- Blend all till smooth
- Strain it
- Soak the Chia seeds in half of the milk for about 15 minutes
Glazed walnuts:
- 1 cup of walnuts
- Half tablespoon of maple syrup
- Pinch of Sea salt
Combine all in a pan and Sautée on medium heat until crisp and golden
Chocolate sauce:
- 1/4 cup chocolate powder
- 2 tablespoons of coconut oil
- 1 tablespoon of maple syrup
- Pinch of salt
- Place the coconut oil in the pan on low heat, when melted add chocolate, maple syrup and salt.
- Stir until well mix together for about 3-5min.
In the making: combine them as you wish, go creative and wild...
Tartlets: fill with strawberry mousse and strawberry sauce, top them with fresh strawberries, chocolate sauce and crushed walnuts. Refrigerate.
Biscuit: Add a layer of chocolate, fresh or cooked strawberries, walnuts and strawberry sauce or mouse. Refrigerate.
Shots: Add a layer of strawberry mousse, a layer of strawberry juice, top them with strawberry juice/chocolate/walnuts/fresh or cooked strawberries!
Sticks: Skewer fresh strawberries and the tiny balls on toothpicks and coat them in chocolate. Refrigerate.
Semifredo: In a glass put a layer of Chia pudding, then fresh strawberries, strawberry sauce, chocolate sauce, strawberry juice and topped with chocolate coated fresh strawberries and walnuts. Freeze until semi-hard!
