A Healthy Food But Cost You Less
Moringa is known to be a miracle tree because every part of this tree has special properties that is good for our body. From it's seeds to the bark and pods and flowers. The most consumed part of it was it's leaves. Medical studies shows that it has all essential amino acids. It also contains calcium, potassium, vitamin c, magnesium, protein, B1 and B2. It is good for diabetic plus it has anti oxidant and lastly it it anti-arthritic.
In the Philippines we called it Malunggay. It is widely used in cooking and aides severe bleeding on wounds. I remember my older brother had a deep cut wounds and he rushed into our house with blood flowing. My mother cleanse his wound and took malunggay leaves, pressed it and form like semi paste and put in his wounds. They covered it with clean cloth and tie to secure that it won't scattered. I saw it is effectivensess because during that time we don't have any betadine.
Aside from medicinal purpose, malunggay leaves are very good in cooking and it is prefect with coconut milk. Like this dish that I will share today. It has a savory and delicious taste that I'm sure anyone will like it.
Here are the ingredients:
250 grams Pumpkin
1 sachet of instant coconut milk
1 small pack of chicharon (can be replace by dried small fish)
2 cloves garlic crushed
2 cups of water
Salt and Pepper
Malunggay leaves
Here's how to cook it:
1.Gently shred the leaves and wash it thorougly. Drain and put it in strainer set aside until needed.
2.Peel and cut the squash in small chunks. Put in a bowl with water. Set aside and drain until needed.
3.Saute garlic in enough oil, once it turned brown add squash. Give a little toss then sprinkle some salt and cover for awhile.
4.Add chicharon and mix it then cover it again. After a couple of minute add 1/2 cup of water.
5.Dissolve instant coconut milk with water then pour together with squash. Add your seasoning like salt and pepper. Cover and allow to boil until it thickens.
6.Add malunggay leaves but do not mix it quickly. Allow malunggay leaves to slightly soften then continue to mix it until well combine.
7.Best serve with rice and the veggies were newly cooked.
I missed to eat foods with coconut milk that's why I ended up with instant coconut milk mix. I do prefer to consume real coconut but the store was far from our home. Maybe this week I will cooked another dish and use real coconut milk. Go ahead and take moringa leaves and do your specil recipes. Anyways, thanks for dropping by and reading my blog.
