Tawa pulao recipe is originated from the streets of Mumbai. People of Mumbai loves this recipe, and now it's hit all over the world. The ingredient that made this recipe so unique and tasty is the use of pav bhaji masala in the rice. They add this masala to make this pulao different from that regular one you found everywhere else. They use to cook the rice on a huge griddle. So, let's note down the ingredients, followed by the recipe step by step.
Ingredients
Four tbsps oil
Two tbsp butter
Two tsp cumin seeds (Jeera)
Two big onions finely chopped (1 1/2 cups)
1/2 Tsp asafoetida (Hing)
Two tsp garlic paste
Two tbsps ginger paste
Two green chilies chopped
Four medium tomatoes finely chopped
Two tsp salt (as per taste)
Two medium capsicums finely chopped
Two tbsps Kashmiri red chilly powder
One tbsp Pav Bhaji masala
1/2 Tsp Turmeric powder (Haldi powder)
1 cup boiled green peas
Two potatoes boiled, peeled and chopped
500 grams Basmati rice (cooked up to 90%)
One tsp garam masala powder
freshly chopped coriander leaves
One lemon

How to cook Tawa pulao:
Step 1: Take a flat pan or tawa and heat four tbsp of cooking oil in it. Later add two tbsp of butter as well. Butter will give smoothness and enhance the taste of pulao. Now, add cumin seeds, asafoetida, and two chopped green chilis to it and give a good one minute stir.
Step 2: Add chopped onions to it and fry them till they are somewhere between translucent and light brown color. Now, throw in the chopped tomatoes and immediately add some salt as well. Salt will help the vegetables to get cooked faster. Mix everything well for 5 minutes.
Step 3: Take 500gms Basmati rice and wash them thoroughly. Now boil the rice 90%. Drain excess water and put the boiled rice aside till the masala is cooked well. Remember to add oil in the boiling water and some salt, it helps to cook rice faster and better.
Step 4: Now add ginger and garlic paste, followed by dried red chilis and chopped capsicum in it. Give about five more minutes to all the veggies to blend together.
Step 5: Add all the powdered spices and boiled vegetables now. Pav bhaji masala, salt if required, turmeric powder, cooked green peas, boiled potatoes, Kashmiri red chili powder and mix everything well for next 5-10mins.
Step 6: Now that cooked peas and potatoes are in the pan we will not take too much time in this. Quickly add the boiled rice into the pan. Mix well so that rice will get coated with all the masala.
Step 7: Now for the final touch to the dish, cut a lemon into halves and squeeze half lemon all over the rice and garnish with some coriander leaves.
Switch off the gas and serve the pulao on a plate just like that, quickly.
