A yummy brunch today, I am going to share what I think is a lovely easy to make brunch recipe. It is a bank holiday here in Ireland today and our five year old is away with his cousins for a few day, we have a great 4 week old who just sleeps.
Why am I telling you this?
We both slept in to 11 AM....hurray!!!! Our first thoughts after wow...what a great sleep was what are we going to eat for breakfast? I am not a great cook, but I have one or two signature dishes and one of them is my world (well maybe just in our house) famous breakfast muffins :-) So I thought that I would share my recipe with everyone. It is hearty, realative healthy and yummy!!!!

Use the cup to cut out a circle in the pancake, you can substitute this for bread or any other base, try and experiment and see what you enjoy most. We just like the pancakes as a base.
Put it all together
Find a muffin tin or something similar and push wrap the bacon around the edge, push your "base" into the bottom and crack an egg into your "mufffin"
Heat your oven to 220C (my oven is old and not fan) so you might have to check your muffin periodically to make sure it doesn't burn, I leave mine on for 15 minutes.
Optional extras
At 15 minutes, you can add any extras, I like to add w little bit of cheese for the last five minutes, yum!
