Hello beautiful humans!
I'm coming at you day two from the home of Porcfest, where I just cooked for my first wedding reception! I recorded this video first thing this morning when I was heading over to the kitchen, and my phone sat there hot-spotting to upload the video for about 4 hours, and when it was finally done I was so busy for the rest of the day that I just got around to typing this up, 14 hours after recording.
The wedding was only about 150 people, and the plan was basically just taco bar... but boy did I catch a few curve-balls today. There were a couple of 2-3 gallon pots, a pop-up propane stove, and a GIANT charcoal grill. Now, with that cooking equipment, I had about 10 pounds of black beans, and a case each of asparagus, sweet potato, avocado, tomato, and a few other things. It all came together quite well, and easefully, though exceptionally long.
I go on a bit of a tangent there at the end too, because I've been finding myself getting more and more annoyed with folks who are generally principled, and claim moral superiority over others quite often, yet still consume meat regularly and are gung-ho for capitalism.
I'm thinking I'll probably write something tomorrow, since I have about 15 hours of travel time. If not, I'll definitely do another video at least :-)
