My improvised Pancit
I wasn’t planning to cook “Pancit” or a.k.a “Rice noodles” today but there are days we just feel like cooking something out of the blue. Whatever I can find to cook, I just went for it! When I opened my pantry the first thing I saw aside from the can goods was the rice noodles that was by itself. I didn’t know I had one left —so yeaaahh why not cook it!
I didn’t have the ingredients that I usually use for my “Pancit Bihon” so I just grabbed anything that can go with it. As in anything! Have no choice I have to improvise so I can pull this off! 😉 plus my hungry kids were already turning into zombies! 🤣
Improvised ingredients:
-cooked chicken
-onions, tomatoes
-hotdog
Here are the steps on how I cooked my
Pancit Bihon (today)
- The first thing to do is to soak the rice noodles in a bowl with water for atleast 9mins. This is because we want our noodles to be soft.
- Put some garlic, onions and a little bit of tomatoes in a hot pan. This ingredients will add texture to the Pancit.
- Saute for 5 minutes.
- Now add the hotdogs and the cooked chicken.
- Add pepper and seasonings.
- Add soy sauce to taste.
- Cook for 5 minutes.
- Add the vegestables, I added cabbage and water 💧
- Now add the soaked rice noodles in the pan.
- Mix it all together!
- Let it cook, but keep mixing until the water goes down.
- It should look like that, now the Pancit is ready to eat!

My Pancit wasn’t bad at all, the kids love it. It was soft and tasty! So happy! 👅
