Hey guys I'm back with a new suuuper easy recipe, one that is an absolute MUST for vegans (or anyone with tastebuds to be honest!)
I eat so much hummus that it's actually crazy that I hadn't started making my own until now, but now that I have I don't think I will ever buy it again!
Not only does this recipe taste better than shop bought hummus, with chickpeas costing around 40p a tin it soo much cheaper. Winning!
Here's what you'll need for about 4 servings (who am I kidding?๐ )
Ingredients:
- 1 can chickpeas
- 4 tbsp fresh lemon juice
- 4 tbsp well-stirred tahini
- 1 garlic clove, crushed
- 2 tablespoons extra-virgin olive oil + a little more for serving
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 2 -3 tbsp water
- Sprinkling of paprika, to serve
Method:
- Add the tahini and lemon juice to your food processor and blend for 1 minute. Stop and scrape the sides and bottom to combine and then process for 30 seconds more.
- Add the olive oil, garlic, cumin, and a little salt to the tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl then process another 30 seconds or until well blended.
- Open, drain, and rinse the chickpeas. Add to the food processor and process for 1 minute.
- The texture will no doubt be too thick at this point, so add the water and blend again until it reaches your desired consistency.
- Taste, and add a little more tahini, salt and pepper if needed.
- Serve hummus with a drizzle of olive oil and a sprinkle of paprika alongside toasted pitta.
It's so simple it's fool proof!
I'm over the moon to be able to whip up delicious healthy hummus whenever I like with so few ingredients and such little expense.
