Delicious veggie dinner.
Cauliflower
Eggplant
Zucchini
Red onion
Bell peppers
Panko bread crumbs
1 egg
Olive oil
Course salt
Marinara sauce
Shredded cheese or vegan cheese
-Beat egg in a prep bowl
-Dip eggplant and zucchini in egg and then coat with bread crumbs.
-coat remaining veggies in olive oil and sprinkle course salt on them sparingly
-build stacks starting with cauliflower and layer the remaining veggies, spoon marinara sauce and shredded cheese between the layers.
Bake at 350 for 35- 40 mins.
