🥥 200g shredded coconut
🧂 ½ teaspoon salt
Instructions
1- Prepare Aipim:
- Peel and chop the cassava into small pieces suitable for blending.
2- Blend Aipim and Coconut Milk:
- In the Mondial Turbo Inox blender, add the chopped cassava.
- Pour in part of the coconut milk to facilitate blending.
- Blend until smooth, gradually adding more coconut milk as needed.
3- Add Wet Ingredients:
- Crack eggs into a separate bowl to check for freshness.
- Add them to the blender.
- Include sugar and Qualy Margarine.
4- Add Seasoning:
- Sprinkle in salt to enhance sweetness.
5- Final Blend:
- Continue blending all ingredients until you have a well-combined smooth mixture.
6- Add Shredded Coconut:
- Incorporate most of the shredded coconut into the mixture, pulsing briefly to combine while maintaining some texture.
- Reserve the rest for topping.
7- Prepare Baking Pan:
- Grease a round bundt cake pan thoroughly.
8- Pour Batter:
- Transfer batter into the prepared bundt cake pan.
9- Add Topping:
- Evenly sprinkle the reserved shredded coconut over the batter.
