🌿 500g Massa Puba, "Ouro Branco" brand
🍯 2 1/2 cups Demerara Sugar
🧈 3 generous tablespoons Butter
🥚 4 whole Eggs
🌰 1 cup Crushed Cashew Nuts
🍫 1/2 cup Chocolate Powder
🥜 1/2 cup Crushed Peanuts
🌱 Spice Mix: Fennel seeds, cloves, and cinnamon, roasted and ground
☕ 1 cup Strong Coffee
🥥 400 ml Fresh Coconut Milk
🌰 20 Whole Cashew Nuts (for topping)
🧈 Margarine (for greasing the pan)
🌾 Wheat Flour (for flouring the pan)
Instructions
1- Prepare Spices:
- Preheat your oven.
- Place fennel seeds, cloves, and cinnamon sticks in a glass dish and roast them for 15 minutes until crispy.
- Use a mortar and pestle to grind them into a fine powder.
2- Prepare Coffee:
- Boil 100 ml of water in a Tramontina small metal pot.
- Add 2 heaping tablespoons of coffee, let it cool, and then strain to achieve 1 cup (240 ml) of strong coffee.
3- Prepare Coconut Milk:
- Grate a coconut and blend it to extract 400 ml of fresh milk.
4- Prepare Baking Pan:
- Grease a 24 cm round aluminum baking pan with margarine and dust it with wheat flour.
5- Combine Dry Ingredients:
- In a large mixing bowl, add 500g of "Ouro Branco" massa puba and 2 1/2 cups of demerara sugar.
6- Incorporate Butter & Eggs:
- Add 3 generous tablespoons of butter and 4 whole eggs.
- Mix thoroughly with a wooden spoon until well combined.
7- Mix Nuts and Chocolate:
- Add 1 cup of crushed cashew nuts, 1/2 cup of chocolate powder, 1/2 cup of crushed peanuts, and the ground spice mix.
- Integrate well.
8- Form Batter:
- Pour 1 cup of strong coffee into the mix.
- Add 400 ml of fresh coconut milk gradually, mixing thoroughly after each addition until smooth and thick.
9- Transfer to Pan & Garnish:
- Pour the batter into the greased and floured baking pan.
- Arrange 20 whole cashew nuts evenly on top for decoration.
10- Bake:
- Place in a preheated oven.
