Ingredients
🌿 1 cup Granulated Tapioca (Yoki brand)
🥛 200ml Milk (Piracanjuba)
🍚 1 cup Sugar
🧂 1 pinch Salt
🥥 50g Grated Coconut (Menina brand)
🍬 Condensed Milk optional for topping (Leite Condensado, blue packaging)
Instructions
1- Mix Dry Ingredients:
- Pour 1 cup of granulated tapioca into a large mixing bowl.
- Add 1 cup of sugar and a pinch of salt to the tapioca.
2- Add Coconut:
- Add 50g of grated coconut to the mixture.
3- Pour Milk:
- Pour 200ml of milk into the bowl with the other ingredients.
4- Mix Ingredients:
- Mix all ingredients thoroughly with a spoon until well combined
- Ensure the tapioca begins to absorb the liquid.
5- Rest Mixture:
- Let the mixture rest for approximately 10 minutes
- Allow the tapioca granules to swell and absorb the milk.
6- Prepare Steamer:
- Prepare the couscous maker by adding water to its bottom chamber, ensuring it does not touch the steamer insert.
- Add a few drops of lemon juice or vinegar to the water to prevent discoloration.
7- Set Up:
- Insert the perforated divider into the couscous maker.
8- Transfer Tapioca:
- Transfer the soaked tapioca mixture into the upper chamber
- Smooth the top gently with a spoon.
9- Steam:
- Cover the couscous maker with its lid and place it on the stove over medium heat.
- Steam for 10 minutes.
10- Serve:
- Once cooked, carefully remove the couscous from the maker
- Invert it onto a serving plate.
- Serve warm, optionally drizzling with condensed milk and a sprinkle of grated coconut for extra sweetness and richness.
