Ingredients
🐔 700g free-range chicken, cut into pieces
🧂 1 tablespoon salt
⚫ 1 teaspoon black pepper
🍋 1 tablespoon lemon juice
🫒 2 tablespoons cooking oil (bottle with a yellow cap)
🧅 1 small onion, chopped
🧄 2 cloves of garlic, mashed
🍊 1 tablespoon annatto powder (Colorau)
🌿 1 teaspoon cumin
💧 1.3 liters of hot water
🌾 150g cassava flour
Instructions
1- Season the Chicken:
- Place the chicken pieces in a tray and season with salt, black pepper, and lemon juice.
- Mix well with your hands to ensure even coverage. Set aside.
2- Sauté Aromatics:
- Heat the pressure cooker over medium heat on an Electrolux stove. Add a few drops of cooking oil.
- Sauté the chopped onion until lightly golden. Then add the mashed garlic and continue to sauté briefly.
3- Add Spices:
- Remove the pressure cooker from the heat. Stir in the annatto powder and cumin to prevent burning.
- Mix quickly to incorporate.
4- Cook the Chicken:
- Return the chicken to the pressure cooker, stirring to coat it with the spice mixture.
- Let it cook for about a minute.
5- Pressure Cooking:
- Pour in hot water, ensuring it covers the chicken by two fingers above the pieces. Secure the pressure cooker lid.
- Cook for 20 minutes once it starts to whistle, then let the pressure release naturally before opening the lid.
6- Prepare the Pirão:
- Remove six ladles of the chicken broth and transfer them to a separate pot.
- Bring the broth to a boil and season with more black pepper if desired.
- Gradually add cassava flour while stirring continuously until a smooth, creamy consistency is achieved.
