Instructions
1- Prepare the Sauce:
- In a small stainless steel mixing bowl, combine 2 tbsp of soy sauce, 1 tbsp of mirin, minced garlic clove, 1 tbsp of sake, and 1 tbsp of brown sugar.
- Mix thoroughly with a wooden spoon or spatula.
2- Simmer the Sauce:
- Transfer the mixed sauce to a small stainless steel saucepan.
- Bring it to a light boil over medium heat, then simmer for about 2 minutes.
- Remove from heat and set aside.
3- Brown the Pork:
- Preheat a frying pan over medium-high heat.
- Add a small amount of cooking oil from a clear squeeze bottle and coat the pan.
- Place the pork slices into the pan and brown them lightly on each side.
- Once browned, remove the pork from the pan and set it aside.
4- Thicken the Sauce:
- In the same frying pan, pour in the previously prepared sauce.
- Bring the sauce to a simmer, stirring continually with a silicone spatula until it becomes glossy and slightly thickened.
5- Finish the Pork:
- Return the browned pork slices to the pan with the thickened sauce.
- Continue to cook, tossing the pork in the sauce until it caramelizes and adheres to the pork slices.
6- Assemble the Bowl:
- In a ceramic serving bowl, place a portion of freshly cooked rice.
- Arrange the sticky, caramelized pork slices neatly around the rice.
7- Garnish (Optional):
- Garnish the bowl with chopped scallions.
- Place an egg yolk in the center if desired.
8- Caramelize (Optional):
- Use a kitchen blowtorch to carefully caramelize the pork in the bowl for a charred effect.
